Heat vegan butter in a skillet over medium heat. Add the sliced shiitake mushrooms, dried thyme, and red pepper flakes. Cook, stirring occasionally, for 5 to 7 minutes until the mushrooms are softened and lightly browned.

While the mushrooms cook, toast the bread slices until golden and crisp.

Remove the skillet from heat. Stir in the sea salt, black pepper, and garlic powder. Taste and adjust seasonings as needed.

Spread smashed avocado generously over each slice of toast. Pile the sauteed mushrooms on top and finish with optional vegan parmesan cheese.
