Whisk the cornstarch into the plant milk slowly to prevent clumps. Add the maple syrup, vanilla extract, salt, ground cinnamon, mashed banana, and turmeric. Whisk until smooth and uniform.

Dip each slice of sturdy day-old bread into the batter, letting it soak for about 15 to 20 seconds per side until well coated but not soggy.

Heat a large skillet over medium heat and add vegan butter. Place the soaked bread in the skillet and cook for about 2 minutes until the underside is golden brown. Flip and cook for another 2 minutes until both sides are caramelized.

Transfer the French toast to plates and top with additional vegan butter, fresh sliced fruit or berries, a drizzle of maple syrup, and optional powdered sugar or coconut whipped cream.
