Heat oven to 350°F. Brown sausage in large skillet; drain and cool.
24 oz bulk sausage (2 (12-oz.) pkg. (1 regular and 1 hot))

Add cheeses, eggs (reserve 2 tablespoons) and seasonings to sausage; stir gently.
4 oz shredded Swiss cheese (1 cup)
1 tbsp grated Parmesan cheese
3 large eggs (well beaten, reserve 2 tablespoons)
1 tbsp dried parsley flakes
1 tsp dried basil leaves (crushed)
1 tsp garlic powder
salt (to taste)
black pepper (to taste)

Keep pastry very cold until ready to use. Roll out 1 sheet of pastry to 12 x 17-inch rectangle.
17 oz frozen puff pastry (1 pkg., thawed)

Place half of sausage mixture along one side of rectangle. Bring sides together by rolling over. Pinch ends tightly. Repeat with remaining pastry and sausage.

Place on cookie sheet and form semi-circle. Brush with reserved egg. Bake at 350°F. for 30 to 40 minutes or until golden brown.

Cool 10 minutes; slice into 1½-inch slices. Combine mustard and honey; serve with puffs.
