Preheat oven to 350°F. In a blender or food processor, combine the cottage cheese, egg, salt, and Italian seasoning. Blend until completely smooth with no lumps remaining.
1 cup cottage cheese (any fat percentage)
1 whole egg
⅛ tsp salt (omit if cottage cheese is salted)
¼ tsp Italian seasoning (or garlic powder)

Line a baking sheet with parchment paper and lightly spray with cooking oil. Pour the batter onto the parchment and spread it into a thin, even layer using an offset spatula or the back of a spoon, making sure no parchment shows through. Bake for 25 to 35 minutes until golden brown and the wrap lifts easily from the parchment.

Let the wrap cool for about 5 minutes. Add your desired fillings — fresh mozzarella, arugula, roasted red peppers, cucumber, avocado, and a drizzle of balsamic glaze make an excellent combination. Roll up tightly and slice in half to serve.
